Banana & Chia Seed Smoothie

Smoothies are my absolute favorite way to start the day. When people think of smoothies, they often think of sweet or fruit filled smoothies. While smoothies can certainly be filled with fruit, there are so many other combinations out there. One of my favorite ways to thicken up a smoothie, especially if I’m not using loads of bananas is with chia seed pudding. I simply soak some chia seeds in almond or coconut milk overnight and the next day, voila! Thick and creamy deliciousness.

I love smoothies with spinach, kale, cucumber, kiwi, mango, coconut, protein powder, all kinds of berries, any organic nut butter and of course bananas. These are just a few of the ingredients I love to incorporate into my smoothies to change things up from day to day.

The recipe I’ll be sharing with you today is one of my favorite “go-to” smoothies. It is creamy, delicious and wonderful with some Jordan’s granola on top.

Banana & Chia Seed Smoothie

Ingredients

  • 2 Tbsps chia seeds

  • 2 Tbsps rolled oats

  • 1 cup almond milk

  • 1 tsp pure vanilla extract

  • ¼ tsp cinnamon

  • 1 large frozen banana (chopped )

  • 1 Tbsp peanut (or almond) butter

Directions

  • Mix your chia seeds and oats in a bowl.

  • Add the milk, vanilla and cinnamon. Stir until well combined.

    Allow this mixture to sit in the fridge overnight.

  • In a blender, or a container suitable for an immersion blender, combine the chia seed mixture with the banana and nut butter.

  • Blend until smooth.

    – If your smoothie is very thick and you would like to make it a bit thinner, I recommend adding almond milk or cold water 1 Tablespoon at a time until you reach your desired consistency.

  • Serve topped with granola or fresh berries.

Like I said before, this is my go-to smoothie, especially if I know I will need to be heading out the door pretty early. This recipe takes no time at all to throw together in the morning since most of the prep work is done the night before.

Also, if you would like a little treat, maybe after dinner, this recipe is wonderful if you add in a bit of Nutella. Delicious!
