Spinach & Chorizo Breakfast Quesadillas

Here it is y’all! My first ever blog post about FOOD! I will try to continue posting healthy and delicious content for you guys in this food section, but every now and then a cupcake recipe or mouth watering not-so-healthy recipe might make it’s way on here. First, I am human. Second, I firmly believe that everything in moderation is A-OK! So, I hope you enjoy this recipe and the recipes I will be posting in the not so distant future. Also, y’all don’t be afraid to shoot me a message if there is a recipe you would like me to try or talk about on here! Let me just say, these Spinach & Chorizo breakfast quesadillas will knock the socks off anyone who tries them! For those who don’t know, Chorizo is basically Mexican style sausage and is sold in most markets.

Spinach & Chorizo Breakfast Quesadilla

When I was little, I can remember my Abuela (grandmother) making breakfast for us. It was always potatoes, eggs, chorizo, refried beans, and fresh homemade tortillas. Oh, the smell that would take over her home on those mornings is like no other. My Abuela is an amazing cook and to me, breakfast is definitely her specialty (along with her tamales for sure!).

Preparing and cooking up these quesadillas reminds me so much of those early mornings watching her prepare our breakfast. I hope you enjoy my spin on a delicious “Mexican style” breakfast as much as I do.

TO FREEZE :

These breakfast quesadillas are a breeze to whip up and they freeze beautifully! Simply make as much of the egg mixture as you want, let it cool, fill your tortillas as if you are making them right then, wrap them in cling film and put them on a baking sheet so they lie flat in the freezer for at least 2 hours. Then they can all be placed in a large bag and pulled out one by one as you need them. They will be good for up to 2 months using this method.

To reheat them, you can microwave them for about 3 minutes or, place them in the oven at 175 C / 345 F for about 15-20 minutes or, if you have the time, thaw them overnight in the fridge and place them on a griddle pan for 4-5 minutes per side until the tortilla is nicely browned and the cheese is bubbly.

Spinach & Chorizo Breakfast Quesadillas

# of quesadillas – about 6-8

Ingredients :

  • 1 Tbsp butter (or olive oil)

  • 4-5 inches of a frozen (or fresh) chorizo log (Chorizo)

  • 2 cups of fresh spinach – torn or diced into very tiny pieces (1 cup frozen, chopped)

  • 1 can of rinsed white beans

  • 12 eggs (or 6 eggs + 6 egg whites)

  • 3 Tbsps milk

  • a pinch of garlic powder

  • a pinch of sweet chili powder

  • salt and pepper to taste

  • 6-8 corn (or flour) tortillas

  • white cheddar cheese (shredded)

Directions :

  • Prepare your eggs by cracking them into a large mixing bowl and adding your milk, garlic powder and sweet chili powder. Whisk all together until well incorporated and sit aside.

  • Heat a frying pan over medium high heat and add your butter (or olive oil). Once the butter is mostly melted, add in your frozen chorizo. Cook this until it breaks apart and resembles ground beef in texture.

  • Add your spinach and allow it to wilt for about 2-3 minutes.

  • Now, add the white beans and mix them into the chorizo/ spinach mixture. It is okay if some of the beans are mashed up.

  • Next, you’re going to pour your egg mixture over the chorizo mixture and quickly stir the eggs as they cook and fluff up. Once your eggs are fluffy, add your salt and pepper to taste.

  • Spoon mixture into the tortillas and top with a generous handful of shredded cheddar cheese.

  • In a grill pan (griddle) , grill the the quesadillas on each side for 3-5 minutes or until the outside is browned and the cheese is nice and bubbly. Serve warm.

I hope y’all enjoy these breakfast quesadillas as much as I do! They are seriously a life saver if I have to run out the door quick. Sometimes, if I know I’ll have a rushed morning the next day, my favorite way to re-heat these is to thaw one in the fridge overnight and just give it about a 10 minute griddle in the morning and Voila! Delicious breaky with minimal “day-of” effort.
