Chicken Spaghetti


Here’s another delicious meal for you guys! Chicken Spaghetti! Now, I don’t know about you, but I could seriously eat spaghetti everyday and never get tired of it! Traditional spaghetti has always been a favorite of mine since I was a little girl. That being said, a recent goal of mine is to cut back on the amount of red meat I consume. Don’t get me wrong, I am not cutting it out completely, just cutting back to see how my body responds to it. This recipe has everything I have always loved about spaghetti in it, just with a slightly healthier twist to it. These days, if I get to craving some spaghetti, this is my go-to recipe and my hope is that you will love it just as much as we do in our home!

Here’s what you will need to have and need to do to prepare this dish just the way I do. Let me know how you like it!

Ingredients :

  • 1 lb minced chicken

  • 2-3 Tbsps olive oil

  • 1-2 jars organic tomato puree ( up to 25.5oz )

  • 1 can organic diced tomatoes

  • 1 medium sweet onion, diced

  • 2-3 garlic cloves

  • dried basil, thyme, oregano, sage (to taste)

  • whole wheat spaghetti noodles

Directions :

  • First, pour the organic tomato puree into a blender and add the garlic cloves and the spices.

    • I recommend adding 1-2 tsp at a time of each spice until you reach your desired taste.

  • Put your olive oil in a pan on the stove top. Once the oil has heated up a bit, cook your minced chicken. Be sure to break it up and give it a stir every once in a while. 

  • As soon as the chicken is almost done cooking, add in your diced onion. Cook until the onions are translucent.

  • When the chicken and onions look done, drain your can of tomatoes and add the drained tomatoes to your chicken mixture.

  • While the chicken mix is cooking, bring a pot of water to a boil. When it is at a rolling boil, add a handful of salt. This is your chance to flavor the noodles. Boil your noodles per instructions on the package.

  • Once the chicken, onions and tomatoes have combined and heated through, pour in your spaghetti sauce from the blender.

  • When your noodles are finished cooking, be sure to rinse them in cold water to stop the cooking process.

I like to add my noodles straight into my spaghetti sauce and mix it together real nice. In my house, no body likes naked spaghetti noodles! Serve this dish warm with a side salad or garlic bread… or both!
